Vinification: Hand picked harvest in 20kg cases. Multiple layers fermentation, alternating whole bunch (40%) and whole berries (60%). Grapes and berries are moved into the tank without pump. Fermentation with natural yeasts and possibility to control temperature. Pump over at the beginning of fermentation, then punching down from mid fermentation.

Ageing: 9 m/ exhausted Slavonian oak barrels + 6 m/ bottle 

Food paring: Charcuterie, Pasta with game sauce, grilled meats, medium aged cheese.
